Capelli d'angelo (angel hair), with a name recalling the extremely light consistency of this type of pasta, have a disputed origin between the Genoa territory and the Neapolitan and Ciociaria area.
It is one of the most fine formats among the nest long pastas: their thickness varies between 0.78 and 0.88 mm.Even the name Capelli d'angelo recalls the typical thinness of this format which is suggested for the diet of children from 9 months onwards, for its ability to help the younger ones to get used to more grown up foods.Capelli d'angelo are a long pasta format suitable for broth based recipes for which it is brocken unevenly.
Capelli d'angelo can also make dried pasta dishes with white sauces, egg, raw butter and cheese, melted butter, sage, parmisan and smoked ricotta.
